Fat Free Rice Pudding

Ingredients
2 to 3 cups cooked rice3 cups skim milk1/2 cup splenda1 tsp vanilla extract1 tsp cinnamon1/2 tsp nutmeg1/2 cup raisins (optional, not in nutrition info)
Directions
In a medium sized pot, mix the rice, milk, splenda, raisins (if using) and vanilla.

Cook over medium heat for about 25 to 30 minutes, or until the liquid is mostly absorbed, stirring often to keep from sticking.

Mix in cinnamon and nutmeg, and cook another 5 minutes.

Serve immediately to add warmth on a cold night, or cool in fridge for a refreshing treat.

Makes approx. 10 - 1/2 cup servings.
