Rice/oat/date muffins

Ingredients
1 cup rice flour1 cup oat flour1 Tbsp baking Powder9 Tbsp flax meal (to replace oil and eggs)1 1/2 cups water or apple juice1/2 cups chopped dates
Directions
Preheat oven to 350. Spray muffin tin. Mix dry ingredients. Stir in water. Fold in dates. Do not over-mix. Divide dough between twelve miffin cups. Bake for aprroximately 15 minutes at 350.
