Bran Flax Muffins

Ingredients
1 cup unbleached white flour1/2 cup whole wheat flour3/4 cup flaxseed meal3/4 cup All Bran cereal3/4 cup brown sugar2 tsp baking soda1 tsp baking powder1/2 tsp salt2 tsp cinnamon1 1/2 cups finely shredded carrots2 peeled and shredded apples1/2 cup dried apricots, diced3/4 cup skim milk2 beaten eggs1 tsp vanilla
Directions
Mix together flour, flaxseed meal, bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in carrots, apples and apricots.

Combine milk, beaten eggs and vanilla; pour liquid ingredients into dry ingredients. Stir JUST until ingredients are moistened; DO NOT OVERMIX!

Put 1/4 cup of batter in each muffin cup and bake @ 350 F for 15-20 minutes.

If you use 1/4 cup for each muffin it should make 18 muffins.
