tofu and veggie hand rolls

Ingredients
1/3 block of tofu, drained on paper towels 1 tbsp oj2 tbsp soy sauce4 sheets nori1 c cooked sushi rice1/4 cucumber, peeled seeded and sliced11 aspargus spears, ends trimmed1 green onion, sliced
Directions
Combine the orange juice and the soy sauce in a bowl and place tofu in mixture. Flip the tofu several times so that it is coated and let sit it mixture for a few min on each side. Saute tofu in a small pan 1-2 min on each side or until golden brown. Use excess marinade as a dipping sauce. While tofu cools slightly microwave asparagus for 1 1/2 min with 2 tbsp water to steam. While asparagus cools slice tofu into strips. When everything has cooled to a temp where it is easy to handle spread sushi rice in a triangle at the bottom of the nori sheet place veggie pieces and tofu on top and roll from one corner to the opposite to make hand rolls. You can use this method with other protein and veggie combos or use brown rice as well.
