Amazing creamy purple broccoli dip

2 pats butter,3 Scallions (spring onions), chopped350g Purple Sprouting Broccoli100g Philadelphia Light1 tbsp Lemon JuiceSalt and Pepper to taste
1. Boil broccoli in some salted water
2. Drain, and whilst broccoli is in the drainer at 2 pats of butter to the pan, melt and cook the spring onions until they wilt
3. Add broccoli, lemon juice, philadelphia, salt and pepper and using a hand blender or food processor blend to a paste
4. Serve with toasted pita breads, crackers, crudités etc.
