Scandinavian Whole Wheat Banana Muffins

Ingredients
Whole Wheat Flour, 1 cup Oats, 1/2 cupBaking Powder, 3 tsp Baking Soda, .5 tspSalt, .25 tspCinnamon, ground, 1.25 tsp Cardamom, ground, .5 tsp Egg white, 1 serving Flax Seed Meal, 1 tbspWater, 3 tbspApplesauce, unsweetened, 1/3 cupRipe Banana, fresh, 1 cup, mashed Brown Sugar, 2 tbsp, packed Sucralose (like Splenda), 2 tbsp
Directions
1. Preheat oven to 400. Mix dry ingredients in a large mixing bowl.


2. Mix applesauce, water, egg white, and mashed banana together before adding to dry mixture. Stir just until well blended (not too much or the muffins will have a rubbery texture.)


3. Spoon evenly into 12 lined muffin cups.


4. Bake for 12- 15 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.
