Easy Crock Pot Black Bean Soup

1 28oz can diced tomatoes, undrained2 19oz cans black beans, drained and rinsed2 1/2 cubes McCormick's Vegetable Bouillon1 medium onion, chopped3-4 garlic cloves, crushed2 cups frozen green beans2 tsp ground cumin2 tsp ground ginger2 tsp curry powder
*I used a 4 quart (16 cup) crock pot.
Dump all veggies, beans, and spices in crock pot. Dissolve bouillon cubes in hot water. Add to pot. Add additional water until desired amount.
Cook on low for 6-8 hours.
Makes 8 two-cup servings, or 16 one-cup servings.

I used fresh black beans and vegetable broth instead of water. I did not use vegetable bouillon. I wanted to cut down on the sodium. - 5/6/09
