Key Lime Pie Larabars

Ingredients
200 g whole pitted dates80 g dry roasted unsalted cashews70 g raw almonds3/4 cup raw shredded coconut1/4 cup lime juice
Directions
- Boil lime juice to reduce to 2-3 tbsp liquid.
- With a food processor, make dates into a paste. Set aside.
- Without cleaning food processor, pulverize nuts into small pieces in processor. Add to dates.
- Add coconut and reduced lime juice to dates and nuts, mix together. Splash a bit of lime juice into the mixture if it seems too dry.
- Shape into a 10 by 4 inch block on a piece of parchment paper. Wrap, chill for several hours.
- Makes 8 bars
