low-fat peanut butter cookies

Ingredients
5 dried apricot halves2 Tbl. water1/4 cup peanut or soynut butter1 cup packed brown sugar1 cup whole wheat flour1 tsp baking powder3/4 tsp salt
Directions
Makes 12 cookies.
Boil 2 Tbl. water with the apricots. Blend in blender or food mill until smooth. Add the sugar and peanut or soynut butter to the apricot spread. Add the flour, salt and baking pwder. Put on a cookie sheet in ball (mixture is crumbly). Flatten with a fork criss-cross. Bake at 325 for 9-10 minutes. They scorch easily.
