Whole wheat couscous salad

Ingredients
2 Cups trader joe's whole wheat couscous1.5 cups water.25 cup olive oiljuice of 2 limes or lemons1 large tomato diced1 bunch green onions chopped.5 cup parsley2 tsps grated ginger root6 cloves garlic1 tsp salt or to tastehot red pepper to taste
Directions
place water in a pot and bring to boil. remove from heat and add couscous, stir and cover lid.; fluff with fork occassionally. In the mean time dice all vegetables, grate ginger and garlic; combine in a bowl add salt and other spices of choice; mix with couscous in a bowl and add olive oil and lemon or lime juice. Mix well.
Makes 8 1 cup servings.
