Organic Quinoa Stuffed Peppers

6oz. of lean grass fed ground beef, cooked and drained2 medium/large organic green peppers1 cup chopped organic onion1 can organic chopped tomatoes1 cup cooked quinoa*Salt and Pepper to taste* Spices to taste (i.e. oregano, italian seasoning, garlic salt, cumin, cajun, tobasco...whatever you like)
Preheat oven to 425 degrees.
Core 2 medium-large green peppers. Prepare quinoa according to box directions. Cook and drain ground beef. Sautee onions with a bit of olive oil. Add the can of organic diced tomatoes and simmer 5 mins. Add in drained ground beef and cooked quinoa. Mix well.
Stuff mixture into cored green peppers. Place in baking pan and cover with tin foil. (May want to spray bottom of pan with Pam or Olive Oil so peppers don't stick.) Bake 30 mins and serve. Delicious.
