Blueberry Sour Cream Muffins

2 large eggs3 large egg whites1 pouch of equal or 57 packets1 cup applesauce1 tsp. vanilla4 cups flour1 tsp. salt1 tsp. soda2 tsp. baking powder16 oz. no fat sour cream2 cups blueberries
Beat eggs and whites. Gradually add equal while beating. Add applesauce and vanilla. Combine dry ingredients. Add alternately with the sour cream to the egg mixture. Gently fold in blueberries. Spoon into greased muffin tins. Bake at 400 degrees for 20 minutes.
