Tuna Cakes

Ingredients
3/4 c finely chopped onion2 T light cream cheese, softened2 tsp lemon juice1/8 tsp pepper1/3 c dry breadcrumbs1 tsp dried dillweed1 can tuna, drained1 egg white
Directions
Coat large skillet with spray; place over medium-high heat until hot. Add onion; saute until tender. Remove from skillet and place in medium bowl. Add cream cheese and next 3 ingredients; stir well. Add breadcrumbs and next 3 ingredients; stir well. Divide mixture into 4 equal portions; shaping into cakes.

Coat skillet with spray; medium-high heat until hot. Add cakes and cook 2 minutes on each side until browned and heated through.

Makes 4 cakes.

    Very nice. I have never made a fish 'patty' before. Am pretty new to cooking fish in general. These were easy and good. Used fresh dill instead of dried and made into 3 patties instead of 4 because it served as half of a meal with stuffed peppers. Will definitely make again! - 2/3/09

    We all loved this, from the teenagers to the preschooler! My husband wished it had some crackers in it or something for crunch. I doubled the recipe for my family, and replaced about 1/4 cup breadcrumbs with flax seed. We made the cakes smaller so each plate had a row of 2-3. Delicious! - 1/20/11
