Oatmeal Pancakes

Ingredients
1 c. oatmeal1/4 c. flour3 tsp. baking powder1 tsp. splenda1/2 tsp. salt1 egg1 c. skim milk2 tbsp. olive oil
Directions
Mix together the oatmeal, flour, baking powder, splenda, and salt in mixing bowl.
Add milk and egg and stir.
Add oil last and lightly stir.
Let rest a few moments, then adjust thickness if desired by adding drops of water.
Bake on hot griddle, cooking one side until batter bubbles then turning over and cook until done.

You can add blueberries, rasins, vanilla, walnuts, cinnamon or apples to the batter before cooking for a variety.
Refrigerate left over batter for use the next day or keep baked pancakes refrigerated one week to reheat.

    These were so delicious! My kids loved them. This will be a new staple in our morning rotation:) I only made slight changes...used whole wheat flour, applesauce instead of oil, and added lots of cinnamon. - 5/5/10

    very good i made it as one big pancake with apples raisins and dried cranberries . in the batter i added apple pie spices and to the apple as well. i finished it off in the oven at 350 for just over 5 minuets give or take. i cut the pancake in to 6 pieces. - 11/18/07

    These were a hit with my kids! They are big oatmeal eaters and I wanted to try something different. I served them with some grape jelly on top and they turned out delish. Will try some cinnamon next time. - 7/25/10

    my husband gave these a 3+ on his all time favorite list (and believe me he LOVES his pancakes!). I added a tsp of vanilla, used 2 tbsp applesauce and cinnamon then topped each one w/blueberries. Definitely a keeper. Thanks - 6/3/10
