Parkins Cake

Ingredients
12 oz oats12 oz whole wheat flour4 oz butter4 oz honey4 oz black treacle1 tsp ginger4 tbs milk1/2 tsp baking soda
Directions
Preheat oven. Grease a 7 x 11 inch cake pan.

In a bowl, mix flour, oats and ginger.

Place the butter, treacle and honey in a medium size pot. Heat over a low heat til it begins to melt and stir it a few times.

Meanwhile, heat the milk to lukewarm.

Add in the flour mixture, stir well.

Add the baking soda to the milk, then add the milk to the flour and treacle mixture.

Pour the mixture in the cake pan, bake for 1 1/2 hours or until a toothpick comes out clean. Let it cool at least 15 minutes before cutting (makes roughly 24 two inch squares). Best if made a day before eating - store in an airtight container.
