1 tbsp sunflower oil1 onion, finely chopped1-2 small hot chillis chopped finely1 red peper, seeded and sliced2 garlic cloves, crushed230g can chopped tomatoes1 tsp tumeric300g long grain rice1.3lts veg stock450g prozen mixed seafood175g green beanshandful of parsley
1. heat oil in a large frying pan and cook the onion pepper and chilli for 5 mins. until soft but not brown. stir in the garlic, tomatoes and tumeric. and cook for 1 min more, stirring occasionally.
2. tip in the rice and cook for 1 min stirring to coat the grains. pour in the stock, stir well and bring to the boil, then simmer uncovered for 8 mins, stirring occasionally, until the rice is is almost cooked and most o the stock has been absorbed.
3. add the seafood and beans and cook for 3-4 mins more. stir in the parsley and seanson.
