2/3 cup pureed avocado2 boiled eggs shredded1/4 tsp. salt1/4 tsp. lemon juicedash black pepper
Directions
Mix avocados with salt, pepper and lemon juice. Stir in the eggs. Makes about 4-1/4 cup servings.

    I added a teaspoon of light mayo and had it on whole wheat with fresh spinach leaves and it was very good. Oh, and I only used one of the egg yolks and didn't miss the other at all. - 10/31/09
