1/2 large head of cabbage1-2 large onions1 red pepper1 large can of diced tomatoes1/2 large bunch of celeryFrench onion soup mix2 medium carrots3 crushed/chopped cloves garlic2 handfuls chopped fresh parsley1 tsp ground cumin2 tsp soy sauce (low sodium)Add other herbs, if desired5 litres of water
Cut vegetables into medium sized pieces and boil, covered with water, for 10 minutes. Simmer until vegetables are soft.
Can be blended if you don't like big pieces.
