Beef Vindaloo Curry

Ingredients
500 g beef, cubed1 x 400g tin of diced tomatoes1 tablespoon vindaloo curry paste (I used Maharajah's Choice)2 medium onions, finely chopped1 tablespoon macadamia oil
Directions
Heat oil in pan, and saute onions until golden. Add beef and cook until lightly browned.. Add curry paste and stir through until meat is well coated and cook over medium heat for 2 -3 minutes. Add tomatoes (chopped fresh tomatoes may be used) and simmer covered for 30 minutes or until beef is cooked.
If mixture dries, add water as needed.
Serves 4.
