Italian Sausage Soup

Ingredients
3 links lean Sweet Italian Turkey Sausage2 tbsp olive oil1 large onion, chopped2 cloves garlic, minced1 tsp oregano4c chicken broth1 can cannellini beans (15oz), rinsed3c fresh spinach, washed and chopped1 tbsp lemon juice
Directions
Remove sausage from its wrapping and saute in 1tbsp olive oil until no longer pink.
Set aside then saute onion in 1 tbsp olive oil for 5-7min, until soft. Add garlic and cook another minute. Add sausage, broth and oregano and let simmer for 20min. Add spinach and let simmer until wilted, 10-20min. Add lemon juice, remove from heat and serve.
Makes 6 1cup servings.

    Loved it. Used low sodium broth, but was still a bit salty, I think I would replace one cup of broth with water, or add a bit of water to make it more brothy. - 4/7/11

    We really loved it and I will definitely make it again but I will use reduced sodium broth. Between the sausage, broth, and dash of Parmesan cheese we added to the top it was too salty. While I was making the soup I was a little scared but it turned out awesome. Def a keeper! Thanks! - 8/8/10
