1 kg. turkey scallopini (9 scallopini)1/2 c. simply egg whites1/2 c. Kellogg's corn flake crumbs3/4 c. Italian style bread crumbs
Preheat oven to 375. Spray 1 or 2 (depending on size) oven proof dishes with Pam. In one bowl put 1/2 the egg whites. On a dinner plate, put a mixture of 1/2 of the corn flake crumbs and 1/2 of the Italian style bread crumbs. Dip each scallopini first in egg white and then in crumb mixture and place in sprayed oven proof dish. Replenish egg whites and crumb mixture half way through. Serves 3-4 Bake at 375 for 30-45 minutes depending on how crisp you like your meat.
