Cornbread dressing and Chicken

3 cups of cornbread crumbs3 slices whole wheat bread, crumbled1 box Stove Top Stuffing mix (chicken flavor)4 cups homemade chicken stock (low fat)1 chopped onion1/2 cup chopped green pepper1/2 cup chopped celery1/2 tsp salt1/4 tsp pepper6 oz cooked, diced chicken breast or tenders
Boil the chicken breasts or tenders with some celery leaves, thyme, and any other seasonings for the stock. Remove the chicken to cool then dice. Then set aside.
To a large bowl add the cornbread crumbs, bread crumbs, stuffing mix, onions, green peppers, and celery. Pour chicken stock over the bread mixture, add the salt and pepper then mix. Add more chicken stock if needed. Stir in the chicken then pour into a baking dish.
Bake at 350 degrees for 30-45 minutes or until the top is browned. Makes approx 12
1/2 -cup servings.
