12 slices White BreadSalt to taste1tsp.Brown Cane Sugar150gms.Shallots(Red Onions)3ripe Tomatoes7-10medium hot Green Chillies10 Sweet Curry Leaves(Kadhi Patta)3tsps.Black Mustard Seeds(Rai)2tsps.Cumin Seeds(Jeera)2tsps.Asafoetida Powder(Hing)2tbsps.Sunflower OilOPTIONAL0.5cup grated fresh Raw Coconut for garnishing
PREPARATION
Crumb the Bread Slices into small pieces.Chop the Shallots and the Tomatoes.Slice the Green Chillies lengthwise.Chop the Coriander Leaves finely.
METHOD
Heat Oil in a non-stick Wok.When hot lower flame and drop in the Black Mustard seeds,Cumin seeds,Sweet Curry Leaves and the Asafoetida Powder. When the Seasoning sputters add the chopped Shallots and fry till soft and transclucent.Add the chopped Tomatoes, slit Green Chillies,Turmeric Powder and Salt to taste.
Simmer till Tomatoes turn pulpy.Add the Sugar and 1minute later add the Bread Crumbs.Stir well together for the Crumbs to mix in well with the Masala.Cover and simmer for 5-7 minutes. Garnish with finely chopped fresh Coriander Leaves and serve hot.
OPTIONAL
Sprinkle finely grated Raw Coconut along with the finely chopped Coriander Leaves on top.
TIP
Use only a dash of Salt for the Masala as the Bread already has Salt added to it.You can use various types of Breads as well as left over Chappatis,Rotis and Bhakris.You can also add Vegetables like fresh Green Peas,Cauliflower Florets,French Beans and Carrots to make it healthier.
