Easy Chicken Stir Fry

2 T canola oil12 oz Chicken breast, no skin, diced1 C onions, chopped2 cloves garlic, minced1/2 C green pepper, chopped2 C carrots, halved and bias sliced1 tsp ginger root, minced2 C shredded cabbage1 C fresh snow peas1 C cashews, dry roasted, halves and wholes3 T lite soy sauce4 C brown rice
Heat 1 T oil over high heat in a wok or large non-stick skillet. Brown chicken; remove and set aside. Heat the other 1 T of oil over high heat. Add onion, garlic, green pepper, carrots and ginger root. Stir fry for 1-2 minutes or until onions are translucent. Add chicken, stir-fry for an additional minute. Add cabbage and snow peas. It will be rather bulky, but the cabbage will cook down rather quickly. Stir-fry for about 3 minutes. Add cashews and soy sauce and stir-fry for an additional 1-2 minutes. Serve over brown rice. Makes 6 servings.
