Tuscan Chicken & White Bean Soup

Ingredients
1 Tbsp olive oil4 Leeks, chopped2 tsp dried sage1/4 tsp black pepper3 Chicken Bouillon Cubes (I used vegan)6 cups water (usually I just eye-ball it!)2 cans cannellini beans, drained & rinsed1 chicken breast, chopped
Directions
Saute leeks in olive oil until soft, stirring often (3 min). Stir in sage, cook 30 sec. Stir in broth/water, beans, and chicken. Simmer until heated through.
