Ingredients
Take 2 Bell Peppers, one green, one red and one onion. Cut the peppers into strips and dice the onion up. Spray the pan with Pam- and toss the ingredients in the pan. Basically all you are going to do is brown the onions. Do not cook the peppers until they are limp. Keep them crispy! This with a turkey burger makes dinner delish!
Directions
This makes about 3 cups of the dish. We usually pile it on the plate- which leaves little room for anything else. I usually serve this with Jenny-O burgers and sliced tomatoes. It makes the meal! This is quick and tasty. You can add garlic or dice tomatoes in it. We have done both and it just adds more flavor to the meal.

What a great relish/side dish idea! I did add the Garlic, tomatoes, & cracked black pepper. You can make a meal of this. I'm having it again tonight with a sprinkling of shredded parmesan and pan grilled gluten free bread! This can be seasoned to taste Italian, Greek, Mid-eastern, Tex-Mex...Thanks! - 5/22/09

Another old favorite of mine! I particularly like to add diced tomatoes when I can get home grown. - 5/21/09
