Roasted Eggplant & Garlic Dip

Ingredients
2lbs of eggplant1 bulb of garlic1/2 cup Fage3Tbsp dried parsley 1 1/2 Tbsp lemon juice
Directions
1. Roast eggplant (stab with fork)and bulb of garlic (wrap in foil) for 40 minutes @ 400 degrees
2. Let cool, remove eggplant innards & roasted garlic cloves to blender
3. Add other ingredients & blend until smooth
