1 lb mixed green leafy veggies such as Kale, Collards, Spinach or Chard3 Tbsp. Olive Oil1 Large onion1 large potato1 Tbsp. salt2 tsp. black pepper6 garlic cloves
Saute the garlic, onions and potato in olive oil in a large soup pot. Coarsely chop greens while the rest is sauteing. When onions are tender, add the greens and stir until the greens shrink down, less than 5 minutes. Add 8-9 cups of water ( just over 2 quarts) and simmer for about 15 minutes without a lid. Add the salt and pepper and simmer for another 5 to 10 minutes. Puree with a hand blender or in batches in food processor. Re-warm if necessary before serving. Serve with a lemon wedge oro squeeze of lemon juice for extra zing and vitamin c.
