Greek-Style Chicken and Orzo

Ingredients
3-1/3 cups Chef's Cupboard low sodium chicken broth1 cup onions, red or yellow2 tsp oregano2 cups Barilla orzo pasta3/4 lb boneless, skinless chicken breasts, cut into small pieces3 cups fresh spinach, torn3/4 cup President fat-free feta cheesesalt and pepper, to taste
Directions
In a large skillet, bring chicken broth, onion, and oregano to a boil. Add orzo, cover, reduce heat, and simmer for 5-6 minutes. Add chicken pieces and cook 6-8 more minutes, or until orzo and chicken are cooked. Stir in spinach. When the spinach wilts, remove from heat; add the feta cheese and salt and pepper to taste.
