My Favorite Tapioca Pudding

Ingredients
Directions
* *Pearl Tapioca, 2/3 cup * Water, tap, 1 1/2 cup * Vanilla Extract, .1/2 tsp * Milk, 2%, 4 1/2cup * Salt, .1/2 tsp * Egg, fresh, 4 large * Granulated Sugar, 1 cup
Soak Tapioca Pearls in the milk for 3 hours. Beat Egg Yolks & mix in.
Stir until mixture comes to a boil. Simmer uncovered over low heat for 50 minutes, while stiring now & then.
Beat Egg Whites with Sugar; Mix in some of the Hot Tapioca.
Return all to pan, Stir for 3 minutes over Low Heat.
Cool in Freezer for 15 minutes. Add Vanilla & mix in.
Serve Warm or cold. Makes 7 Cups.
Great for Parties. Also Great mixed with Chocolate Pudding Layers in a Par Fa type glass with a Dab of Cool Whip & Sprinkled Nuts. Cherry Optional.

I did a half recipie and it turned out yummy. I don't know what the water mentioned is for. I just ignored it and the salt. Could maybe make do with less sugar or even no sugar. For some reason it tasted yummy with just milk and the tapioca pearls I had. Might just have been my mood - 11/17/10
