Banana Cupcakes

Ingredients
1 1/4 cup white flour1 cup whole-wheat flour1 1/2 tsp baking powder1 tsp baking soda1/2 tsp salt1 cup mashed ripe bananas1 cup sugar2 tsp lemon or lime juice3/4 cup skim or fat free milk1/2 cup unsweetened applesauce (I make my own)1 tsp vanilla extract2 eggs1 tub of lite whipped topping (like Cool Whip)
Directions
1. Mix lemon juice and milk together in a small cup; let stand 5 minutes.
2. Mix all dry ingredients together, add all wet into a well at the center
3. Pour into muffin/cupcake pans (greased or with cupcake paper)
4. Bake at 350 for about 15minutes or until done. Cool thoroughly on wire rack.
5. Icing tops with cool whip type icing.
