Curried Cauliflower Mushroom Soup (1c = 1 serving)

Ingredients
* Onions, raw, .75 medium (2-1/2" dia) * Celery, raw, 2 stalk, medium (7-1/2" - 8" long) * Carrots, raw, 1 medium * *Canola Oil, 1 tbsp * Chicken stock, home-prepared, 5 cup * Mushrooms, cooked, 1.75 cup pieces * Cauliflower, raw, 1.5 cup * Butter, unsalted, 2 pat (1" sq, 1/3" high) * *Chick Peas, 1 cup
Directions
Saute onion and carrot in oil. Add to 5 cups of stock and 2 cups of water. Add chick peas to stock. Cook for 10 min. Blend til smooth with immersion blender.
Cook another 30 minutes. Meanwhile slice mushrooms and saute in 1 T butter. In a separate pan, cook 1 T curry in 1 T butter then stir in cauliflower and 1 c of the soup to help braise the cauliflower. Cook til tender. Add mushrooms and cauliflower to soup.
Makes 8 cups. 1 c = 1 serving
