Thai Noodle Salad

SALAD:1/2 lb. whole wheat spaghetti2 cups baby spinach (roughly chopped)1 cup chopped tomatoes1 medium carrot, peeled and julienned*1/2 red bell pepper, seeded and sliced into thin strips (optional)1/2 cup fresh cilantro, choppedDRESSING:3 Tbs. lime juice2 Tbs. toasted (dark) sesame oil1.5 Tbs fresh ginger, grated3 cloves garlic, minced1.5 Tbs rice vinegar1 Tbs. sugar*1.5 tsp chili paste (optional)*Red bell pepper and chili paste are NOT included in nutritional facts.
Cook the noodles until al dente. While they are cooking, whisk together the dressing ingredients. Rinse and drain the noodles thoroughly and place in a large bowl. Add half of the dressing to the noodles and stir gently until noodles are coated. Add the fresh vegetables and the remaining dressing and stir to combine. Let sit for 30 minutes. Serve at room temperature.
