FAYE'S CHOCOLATE OATMEAL RAISIN COOKIE BARS 207.4= CALORIES

Ingredients
* *Old Fashioned Quaker Oatmeal- Plain, 4 CUPS, AFTER MEASURE THEN GROUND IN FOOD PROCESSER * Cocoa, dry powder, unsweetened, 3 tbsp * Brown Sugar, 3/4 cup, packed * Granulated Sugar, 1 cup * Powdered Sugar, 1 cup, unsifted * Vanilla Extract, 2.5 teasp * Egg, fresh, 2 large * *Egg white, 1 serving * Raisins, .5 cup (not packed) * Almonds, 1 cup, whole .. GROUND AFTER MEASURING * Salt, 1 tsp * I Can't Believe It's Not Butter, Light Spread (Soft), 1/2 CUP
Directions
IN BOWL MIX GROUND OATMEAL, 2 TBSP COCOA, ALMONDS, RAISINS, SALT. MIX WELL.
IN ANOTHER BIGGER BOWL CREAM THE BUTTER, AND BROWN AND WHITE SUGARS TOGETHER. ONCE CREAMED ADD THE 2 EGGS AND 1 EGG WHITE, MIX WELL. ADD 1 1/2 teasp VANILLA, MIX WELL.
NOW POUR 1/2 THE OATMEAL MIXTURE INTO THE EGG MIXTURE AND MIX WELL. POUR THE REST IN. MIGHT BE A LITTLE TOO WET BUT THAT'S GOOD. WON'T DRY OUT. MIX WELL.
POUR ALL MIXTURE ONTO A JELLY ROLL PAN AND SPREAD END TO END WITH HANDS. PRESS THE MIXTURE DOWN AND MAKE IT GO ALL OVER IN THE PAN. BAKE AT 350* FOR ABOUT 30 MINS KEEP EYE ON IT. SOME OVENS COOK DIFFERENT.
ONCE DONE BAKING. MIX IN A MEASURING CUP.. THE POWDERED SUGAR, AND 1 TBSP COCOA, AND 1 teasp VANILLA, WITH VERY LITTLE WATER MAYBE 1 teasp. MIX WELL TILL NO LUMPS.
CUT THE BAKED COOKIES INTO 27 BARS I DID 3 ROLLS OF 9.
AFTER THEY ARE CUT LEAVE IN PAN AND POUR THE CHOCOLATE ICING OVER THE BARS. SPREAD IT OUT TO GET SOME ON ALL OF THEM. DRIZZLE IT. LET SET AND PACKAGE IN A AIRTIGHT BOWL OR A OLD ICE CREAM BUCKET WORKS WELL.. ENJOY!!!

    Wow, 27 bars! Interesting that you ground the oatmeal and Im so glad you said for us to use "Old Fashioned Quaker Oatmeal." Runner ups dont bake well so far for me so this is great and love to have a few almonds in this as well. Very good! Love storing em in ice cream box-freezes well? I give 5 *. - 5/27/09
