Balsamic Bean and Veggie Salad

3 tbsp. balsamic vinegar3 tbsp. olive oil1 tbsp. honey or agave nectarDijon mustard, 1 tsp.1 tsp. Italian herbsDash salt and pepper1/2 cup corn kernels1/2 cup edamame1 cup mixed beans3/4 cup cucumber, chopped1/2 cup tomato, chopped3/4 cup red pepper, chopped
Pour vinegar into a mixing bowl. Drizzle in oil, whisking constantly. Add honey, mustard, herbs, salt and pepper and mix well. Add the beans and vegetables and mix well. Serve immediately or let sit to up to six hours on the counter to let flavors blend. Makes 4-1 cup servings.
