Tasty Thai Tuna Lettuce Wraps

1 can of solid albacore tuna (6 oz.)1/2 cup of cooked white rice (I use jasmine)1 large egg white (beaten)1 tsp. of fish sauce1 Tbsp. grated fresh ginger (or slivered)1 clove of garlic minced1/2 small onion (diced)Handful of cilantro (chopped)1 Thai chili pepper (diced) (optional)Juice of 1 fresh lime1 Tbsp. chopped peanuts (optional topping)
This is best made with leftover rice. If you don't have leftover, cook 1/4 cup of white rice to make 1/2 cup cooked. Chop up the peanuts and set aside. Cut the lime in half and set aside. Drain the tuna, and flake it with a fork in a bowl. Add the cooked rice and the minced/chopped ingredients. Add grated ginger. Beat egg and stir into mixture. Cut the lime in half and squeeze half of it into the mixture. Add fish sauce. Spray frying pan with cooking spray and heat over medium high heat. Pour mixture into pan and flatten down with spatula. Fry until golden brown on both sides, about 2-3 minutes each side. When serving, top a romaine lettuce leaf with mixture, sprinkle the chopped peanuts over top and a squeeze of lime juice from the other half of the reserved lime. Add more heat, lime, cilantro, etc. to your taste. This recipe is from my Thai mother-in-law. You can make it with ground meat (any kind) as well, but would cook it longer. Serve warm or refrigerate and serve later. Enjoy! Makes 2 servings of about 3 wraps each.
