Mediteranian Whole Wheat Couscous Salad

Ingredients
1 box of Whole Wheat Couscous (about 11/2 cups) dry1 1/2 chopped tomatoes1/2 med cucumber chopped1/2 cup sliced green salad olives3 Tblsps Olive Oil3 Tblsps Lemon Juice1 tsp Garlic Powder1 tsp Oregano1 tsp Fines Herbspepper to taste
Directions
Cook Couscous according to directions on box. I use salt substitute because I am watching my sodium. Chop up all vegies. Put in bowl. Add Olive Oil, Lemon Juice & herbs and shake well.
After couscous is cooled, add vegies & mix well. Then toss with dressing.

Serves 6
It's whole grain & contains Omega 3s from Olive oil.
