Mediterranean Couscous

1 can chicken broth3/4 c couscous, uncooked3/4c grape tomatoes, halved3/4 c cucumbers, chopped1/4c green onions, diced8-10 Calamata olives, diced1/2c feta cheese1/2 tsp lemon rind2 Tbsp Lemon juice (fresh is best!)1/2 tsp salt1/2 tsp pepper
1. Bring chicken broth to a boil and add couscous. Cook for time on packaging.
2. In a salad bowl, combine all other ingredients, except feta.
3. Allow couscous to cool slightly then add to bowl. 4. Chill in fridge. Before serving, add feta and mix.
*Makes about 6 -1 cup servings
