100 calorie lemon cup cakes

Ingredients
6oz Granulated Sugar6oz self raising flour6oz butter/light margarine2 medium eggshalf a lemon, juice & rindoptional:white chocolate for topping
Directions
1. preheat the oven to 180 degrees c
Weigh out the butter and the sugar and put in a large mixing bowl, and cream together.

2. Add in the eggs, add in juice of lemon and grate the rind. Mix well, and then gradually fold in the flour. The mix should be of dropping consistancy. If not, add in some water.

3. place the mixture into 20 cupcake cases, place in oven for about 15-20 minutes, until springy to the touch.

4. place on a cooling rack for about an hour

optional: melt some white chocolate, and drop into the top of the cakes with a teaspoon.
