6-ingredient Indian Butter Chicken

3 pounds boneless, skinless chicken breast, cubed1/2 stick margarine1 tablespoon cayenne pepper3 garlic cloves, minced4 ounce can tomato sauce, no salt added4 ounce light sour cream
Heat pan on medium high heat.
Drop margarine in pan and melt.
Drop chicken in pan and add minced garlic.
Turn heat to medium heat.
Fry chicken for 10 minutes, stirring occasionally to brown all sides.
Pour tomato sauce and stir. Cover pan, and cook for 5 minutes.
Turn heat to medium low and add the sour cream.
Cook, covered for another 10 minutes, stirring occasionally, and your done!
Serve with cooked basmati rice (not added in nutritional calculations).

I can see this recipe being plain as is, but it makes a fantastic base. I added diced onion, 1/4 t salt, 1/2 t ginger, 1 t each curry, cumin, garam masala, 1 drained can no salt tomatoes. Instead of sour cream, I used Greek yogurt, which curdled... so next time I'll stick to sour cream. Delicious. - 5/21/10

I should edit reciped to say this is the "lazy-man's" rendition of Indian butter chicken. Its meant to be just a quick substitute for the real deal when you're having one of those days where you don't want to take out the cutting board and deal with all that stuff. All your additions are spot on :)

This was very good but also very plain. I had to add lots of different spices and may family doesn't like spicy foods so that gives you an idea of how bland it is as written. I added garam masala, which I think is a blend of Indian spices, and some curry powder, plus some others. We'll make it again - 6/18/09
