Chicken liver pate

Ingredients

1 onion finely chopped500 g of chicken livers6 teaspoons pf mixed herbs4 garlic cloves1 teapspoon of single or double creamTablespoon of whiskey (or alternative)
Remove membranes and fat from livers, set aside.
Add onion to olive oil and fry until softenened and going brown
Add chicken livers, garlic & herbs until livers are cooked (about 7 mins)
Season with salt & pepper
Add to a food blender and add whiskey (or brandy, port or jack daniels)
Add cream and blend for five minutes.
Serve into dishes (flattening top with the back of a spoon) and leave to cool, keep refrigerated overnight and serve with warm crusty bread.
