Banana Flax Bread

1/2 cup brown sugar2 med bananas (dark)1 cup almond meal1 cup soy flour3/4 c flax meal1/2 tsp Lite Salt1/4 c egg substitute1/4 c canola oil1 teaspoons baking soda1/2 c mini chocolate chips
Toss bananas and sugar into mixer and mix until consistent.
Add oil and egg substitute. Mix until consistent.
In a separate bowl, combine almond meal, soy flour, flax meal, salt and baking soda until consistent.
Add dry ingredients to wet ingredients and mix until dry ingredients have just become moist. Fold in chocolate chips.
Pour into loaf pan that's been sprayed with non-stick cooking spray.
Bake at 350 for 45 - 50 minutes. Check early and often. Be careful not to overbake.
