White Wine and Mustard Baked Chicken

Ingredients
4 bonless skinless chicken breasts1/4 cup Italian bread crumbs12 tsp Dijon mustard1/2 cup white wine1/2 tablespoon light olive oil
Directions
Preheat the over to 350 degrees. Lightly coat a baking dish with extra virgin olive oil/cooking spray. Pour 1/2 cup white wine into a bowl and add mustard. Coat chicken breasts evenly. Add bread crumbs to a separate bowl; dredge mustard and wine coated breasts in the bread crumbs. Place in baking dish and tent with tinfoil. Cook covered at 350 degrees for 15 minutes. After 15 minutes, cook for another 15 uncovered. Let the chicken sit for 5 minutes before serving.

    This was fantastic... it was the easiest tasty chicken recipe I've ever baked in the oven. It came out nice and juicy (thanks to the low cal sauce) and it required almost no ingredients and about 2 minutes of prep time. The only thing I had to do differently was cook it longer. - 3/11/10

    I made this for me and my wife. I was a bit skeptical at first but it turned out really great. I used a pinot grigio for the wine and panko italian bread crumbs. It was great. I'm definitely going to make it again; perhaps with a chardonnay! - 7/30/09
