Ingredients
Directions
1 cup Pumpkin puree (like libbys)2 and 3/4 C of 1% milk, - you can substitute fat free or soy, but taste will be slightly different.3-4 Tablespoons of French Vanilla Sugar Free coffee Syrup (If you don't have the coffee syrup, you can use 1 TBSP vanilla extract and 1/4 cup of sugar/sugar substitute -but it will affect the calorie count) 1/4 tsp Ground Cinnamon - or to taste1& 1/4 tsp Pumpkin Pie spice - or to taste3-4 shots of espresso (1.5 oz per shot), or 16 ounces of double strength brewed coffee. You can also make this without any added coffee!
Pour milk into a small saucepan, and whisk in pumpkin, cinnamon, pie spice and vanilla syrup until smooth. Heat over medium to medium low heat until lightly simmering. DO NOT BOIL. Remove from heat. Pour espresso/double strength coffee into 4 large individual mugs (at least 12 oz). Pour about 1 cup of pumpkin milk mixture into each mug of coffee/espresso. Enjoy!
------If you have a milk frother wand, you can foam up the pumpkin milk mixture a bit before adding it to the coffee. You can also try putting it into a blender and whipping it for a bit on a high setting. I got a decent froth from mine by pouring it into my magic bullet blender and blending it for 5 seconds.-----
