Refried beans

Ingredients
1 tbsp finely chopped onion2 finely chopped garlic cloves1 tsp olive oil1 can mixed beans (or any bean of your choice)Juice of 1 lemonblack pepperchili powder to taste1 tsp cumin1/2 tsp coriander leaf
Directions
Fry onion and garlic gently in olive oil.
Add beans (drained and rinsed) and all other ingredients and cook gently for 10-15 minutes.
Mash to desired consistency using a potato masher, adding a little water to make it creamier if you like. (Salt can be added to taste at this stage if you like, but this is not included in the recipe calculation as I don't usually find it needs it.)
Makes 4 servings (or 2 huge ones!).
