Fried Zucchini Patties

  • Number of Servings: 12
Ingredients
3c shredded zucchini1/2c low fat shredded cheddar cheese3 tsp dried parsley1 large clove garlic,minced1 large egg1 cup Bisquicksalt and pepper to taste
Directions
In a large mixing bowl combine all ingredients until mix thoroughly. If mixture is a little too dry add about a tablespoon of water.Spray cooking spray in a large nonstick skillet and heat over med.-high heat. Using a tablespoon drop spoonfuls of mixture into frying pan leaving about 1/2 in between them
The patties will seem very thick at first but as they cook they will flatten out a bit. When brown on one side flip and continue cooking until golden brown.
Makes approx. 12 patties

    The BEST Zucchini recipe!!!! I made 24 small ones instead of 12 bigger ones. Topped with a little red hot to add a kick to it! I did not have bisquick, so instead, I used 1 c. whole wheat flour, 1 and 1/2 t. baking powder and 1 t. salt instead...worked perfectly!!!!! - 7/20/10

    Tasty and filling - my husband even liked them and he hates veggies!! I made a half recipe and only used the egg white and it worked well. I will make it again but I will add some additional spice - or serve with hot sauce. - 8/27/10

    We liked the overall mixture, just weren't crazy about the soft mushy inside. When I try it again I think I will add more seasoning for more taste and spread much thinner like hash browns instead of patties making more crunchy brown. - 5/11/15

    I made some of these with the cheese and some without. My hubby got the cheesy ones and loved them. The cheeseless ones are dry and bland and gluey, so I would recommend finding another recipe if you want something sans cheese. - 3/21/12
