Roasted New Potato Salad Smothered in Chives

Ingredients
small new potatoes EVOOLight Mayofresh chivesDijon mustard coarse salt pepper
Directions
Toss 1 lb. quartered unpeeled small new potatoes (Yukon gold if available) with 1 TBS EVOO; spread on rimmed baking sheet. Bake @ 400 for 30 minutes or until potatoes are trender. Toss with ½ ff mayo mixed w/1/2 c. sliced fresh chives, ½ tsp. Dijon mustard & ¼ tsp. of coarse salt & pepper. Serve warm or room temperature.
