Cuban Black Bean Quesadilla

Ingredients
.5 c. green pepper chopped1 clove garlic1 can drained black beans,25 tsp dried oregano1.5 tbs vinegar2 tortillas
Directions
makes 3 servings

Saute green pepper and garlic in sauce pan with 1 T oil until soft.

Add black beans, oregano, and vinegar. Cover and simmer for 10 min over low heat.

In skillet place beans and 1/3 of cheese in each tortilla. Cook until done. Top with salsa.
