Saucy Seafood Stir-Fry

Ingredients
Non-stick cooking spray1 tsp. Canola Oil1/2 cp carrots, julienned1 cp cauliflower florets1 cp broccoli florets1/4 cp red peppers, sliced1/4 cp green peppers, sliced1/4 cp yellow peppers, sliced1/2 lb shrimp, peeled and deveined1/2 lb scallops2 tsp reduced fat margarine1 tbsp reduced fat mayonnaisejuice of 1 lemon
Directions
Serving size- makes 4 servings

1. Spray a large frying pan or wok with cooking spray. Add 1 tsp canola oil to pan and heat to medium high.

2. Stir fry vegetables one at a time, adding in the order carrots, cauliflower, then broccoli, for a total of about 5 minutes. Sprinkle with water if they start to stick or burn. Then add peppers.

3. Add shrimp to mixture and continue cooking for about 2 minutes. Add scallops and continue cooking until shrimp turn pink and scallops turn white. Set aside.

4. Melt margarine in microwave. In a small bowl, whip mayonnaise and melted margarine together until smooth. Add lemon juice.

5. Combine mayonnaise mixture with stir-fry mixture.
