Refrigerator Bran & Flax Muffins

Egg, fresh, 4 large Granulated Sugar, 2 cup Buttermilk, lowfat, 1 L (4 cups)Baking Soda, 8 tspCanola Oil, 1.5 cup Quaker Wheat Bran, 2 cup Kelloggs All-Bran Cereal Original, 3 cup Molasses, Crosby's 0.5 cupRobin Hood best for bread homestyle white flour, 5.5 cup (or nutri flour)1/3 cup Flaxseed meal
Mix together. Put in sealed container in the fridge. Keep for 2 days before using. May be stored up to 1 month in the fridge. (May substitute Raisin Bran Cereal for the All Bran).
Bake at 425 for 12-15 mins.
Calories are for mini muffins - using approx 23 g of mix per muffin. = 66 calories each
Or if using medium muffin tins, makes ~ 40 muffins at 222 calories each (using about 77g of mix per muffin)
